Turkey Tacos

I LOVE Mexican food, it is usually my go to for a fast, quick and easy dinner. Bean and Cheese burritos, Quesadillas, Chilaquiles, Enchiladas, Tamales and of course Tacos! We haven't had tacos in a while usually means a week. Yes that is how much I love these crispy, spicy little devils and in order to cut calories and fat we fill them with ground turkey and "soyrizo". If you haven't tried soyrizo it's life changing and adds the most amazing flavor to your meat filling. So here we go, Turkey Tacos!

Turkey Tacos
 
1 lb Ground Turkey (whatever kind you prefer, but I use the 93/7 fat ratio)
1/2 a tube of Soyrizo(can be found a most major supermarkets)
Garlic Salt TT(to taste)
Pepper TT
1 Dozen Corn Tortillas(you may not use them all depending on how many tacos each person wants)
1/2 a head of Romaine Lettuce, or Cabbage or a Bunch of Spinach
Shredded Cheese(do I have to say how much? cheese is sprinkled libraly, haha!)
Salsa or hot sauce for topping(I like Tapatio)
Vegetable Oil
 
Wash and dry your lettuce(or whatever you want to use for your veggie portion) Shred it into nice sized ribbons. Set aside along with cheese, salsa and hot sauce to create a little taco bar. If you like other things with your tacos feel free to add them to your condiments.
Heat a non stick frying pan on medium heat and add the Turkey, Sprinkle with Garlic Salt and Pepper and break up with a spatula. Cook until it is brown and there is no more pink to to the meat, times vary depending on your stove. Add the soyrizo and break that up and incorporate into the meat. Put on low and stir occasionaly.
Get a platter ready with paper towels to put your fried tortilla shells onto.
 
Take another pan out, one that is NOT non stick and heat about a quarter cup of oil, just enough to barely cover the bottom of the pan. I use a large pan so I can fry about 3-4 Tortillas at a time.
Take a tortilla and with a pair of tongs place into the hot oil, you'll know it's hot when the edges of the tortilla hit the oil and bubble a bit, that should take a few seconds, flip and heat the other side for a few more seconds and fold in half. Cook until the one side is golden brown and flip over and cook until that side is golden brown, place on the paper towel and let drain. Repeat until you have the amount of shells you want.
 
Stuff the shells with a few Tbls of meat and let everyone dress them how they like. Serve with beans or rice. I usually just serve with beans since it's quick and easy, rice, since I use brown, takes far to long for my patience when it comes to tacos.
